The book I learned bagelmaking from (Mark Bittman's How to Cook Everything) first suggests rolling these thing into cylinders and pressing them into O's, which I have never tried. It seems dumb to mess with the integrity of these little dough balls. I just poke a hole through the middle and try to shape them a bit. Cover these up and let them rest on the counter for a half hour. | ![]() | |
