As you remove the bagels from the water, let them drain on a rack briefly. I bake them on a silicon mat because I am enormously fond of my silicon baking mat. Nothing will stick to it. If you are matless, you'd probably want to grease your baking sheet. But don't go without a mat for long! They regularly go on sale for less than $10 on Amazon.
