You are supposed to spray the oven with water before placing the bagels in and then again after five minutes. This is beyond my capabilities for a variety of reasons, all of them stupid, but I keep the oven moist another way. I put some of the hot water that I just used to boil the bagels in a pan and put that pan on the lowest rack of the oven. I cook the bagels just above that. It seems to work ok. Bake the bagels for 25 minutes until they are brown. |  |
